Chocolate Fondue! Con Gingerbread Piccante e Marshmallows!

Fonduta di cioccolato. Ricca. Vellutata. Cremosissima!
(per 4 persone)

Chocolate Fondue. Rich. Velvety. Absolutely creamy!
(recipe for 4 people)

Cioccolato fondente, spezzettato/dark chocolate, shredded: 250 gr
Panna liquida/heavy cream: 100 ml
Burro/butter: 25 gr
Zucchero/granulated sugar: 25 gr

In un pentolino da bagnomaria ponete tutti gli ingredienti. Lasciate sciogliere. Mescolate, amalgamando bene. Versate la crema ottenuta in un pentolino da fonduta e enjoy!
Place all the ingredients in a bain-marie (double boiler) . Let them melt slowly. Stir and pour in a fondue pot.

Ginger fresco/fresh ginger: 100 gr

Zucchero semolato/granulated sugar: 160 gr

Acqua/water: 200 ml

Sbucciate il ginger e tagliatelo a fettine sottili. Ponetelo in un pentolino e copritelo di acqua. Portate ad ebollizione, abbassate il fuoco e lasciate sobbollire per 10 minuti. Scolate. Ripetete l’operazione una seconda volta.

Ponete il giunger scolato in una pentolino da marmellata insieme allo zucchero e a 200 ml di acqua. Lasciate sobbollire e portate a 106 gradi. Togliete dal fuoco, coprite e lasciate riposare per almeno un’ora. Il ginger così candito si conserva in frigo nel suo sciroppo.

Slice the ginger as thinly as possible.

Put the ginger slices in a pot, add enough water to cover them, and bring to a boil. Reduce heat and let ginger simmer for ten minutes. Drain, and repeat, simmering the ginger slices one more time.

Mix the sugar and 200 ml of water in the pot, along with a pinch of salt and the ginger slices, and cook until the temperature reaches 225F (106C.)

Remove from heat and let stand for at least an hour, although I often let it sit overnight.  

 

Pan di spezie (una mia personale rielaborazione della ricetta de Laduree)
Ginbgerbread (my revised version of the recipe of Laduree)

Burro/butter: 75 gr
Acqua/water: 150 ml
Zucchero semolato/sugar: 100 gr
Miele/honey: 100 gr
Arancia, buccia/orange zest: 1, biologica possibilmente
Farina/flour: 110 gr
Farina integrale/whole wheat flour: 110 gr
Lievito/baking powder: 8 gr
Zenzero (ginger) in polvere/powdered ginger: 2 + 1/2 cucchiai, 1+1/2 tbsp
Cannella/cinnamon: un cucchiaino scarso/ 1 tsp
Noce moscata/nutmeg: 1/2 cucchiaino, 1/2 tsp
Chiodi di garofano in polvere/powdered cloves: 1/2 cucchiaino, 1/2 tsp
Ginger candito/candied ginger, cut in cubes: 60 gr, tagliato a cubetti o a listarelle

Imburrate e infarinate uno stampo da plumcake e ponetelo nel freezer.

Accendete il forno a 200 gradi.

Portate ad ebollizione l’acqua insieme al miele, allo zucchero, al ginger in polvere e al burro. Lasciate sobbollire per 5 minuti. Ritirate dal fuoco e coprite. Lasciate in infusione per almeno 30 minuti.

A parte setacciate la farina insieme alle restanti spezie e al lievito. Aggiungete la buccia d’arancia grattugiata.

Quando il composto acqua/miele/ginger sarà freddo versatelo sopra le farine. Mescolate fino a che tutta la farina sarà inglobata. Aggiungete il giunger candito e mescolate.

Ritirate lo stampo dal freezer e versatevi l’impasto.

Ponete in forno. Dopo dieci minuti abbassate la temperatura del forno a 180 gradi. Cuocete per almeno 30 minuti. Passati 30 minuti fate la famosa prova dello stecchino: se esce pulito dal centro dell’impasto, il pan di spezie e’ pronto altrimenti cuocete per altri 10 minuti.

Ritirate dal forno e lasciate riposare per 20 minuti. Estraetelo dallo stampo e enjoy!

Butter a bread pan and place it in the freezer.

Preheat the oven to 200 degrees. 

In a small pot bring to a boil the water, honey, sugar, powdered ginger and butter. Let simmer for 5 minutes. Remove from the fire and cover. Let it infuse for about 30 minutes.

In a separate bowl sift the flour with the remaining spices and the baking powder. Add the orange zest.

When the water/honey/ginger mixture is cold, pour it over the dry ingredients. Mix it until there is no visible trace of flour. Add the candied ginger and mix once again.

Per i marshmallows all cannella:
Zucchero/sugar: 350 g
Cannella/cinnamon: 3 cucchiaini/3 teaspoons
Colla di pesce/gelatin: 25 g – 3 envelopes
Acqua fredda/cold water: 125
Sciroppo di glucosio/glucose syrup: 160 g
Foderate una teglia rettangolare (io ne ho usata una di 25cm X 34cm) con carta da forno e cospargete di zucchero a velo.
Fate ammorbidire i fogli di colla di pesce in 125 ml di acqua fredda (circa 10 minuti).
In una pentola portate ad ebollizione lo sciroppo di glucosio insieme allo zucchero, alla cannella e a 60 ml di acqua fredda.
Inseritevi un termometro da caramello e lasciate che la temperatura raggiunga 125 gradi.
Una volta raggiunta la temperatura versate sulla mistura colla di pesce-acqua e azionate le fruste.
Sbattete per 10 minuti alla massima velocità.
Se lo desiderate, colorate con qualche goccia di colorante alimentare.
Versate nella teglia e cospargete di zucchero a velo la superficie dell’impasto.
Lasciate riposare per almeno 6 ore a temperatura ambiente.
Trascorse le 6 ore, estraete l’impasto dalla teglia. Posatelo su un ripiano e tagliate i Marshmallows nelle forme desiderate (io ho usato delle forbici da cucina). Rotolate ogni Marshmallow in un po’ di zucchero a velo e gustate!
For the marshmallows:
Line up a pan with waxed paper and coat it with powder sugar.
Pour the 3 envelopes of gelatin into the bowl of an electric mixer
Put the cold water into the bowl with the gelatin. In the meantime combine the sugar, the glucose, the cinnamon and 60 ml of water in a saucepan. Bring to a boil. Place a candy thermometer in it and watch for the temperature to reach exactly 244°F. 
Pour the boiling sugar mixture into the gelatin mixture and start mixing it at high speed. Beat for at least 15 minutes. Add food coloring, if desired. Spread the mixture evenly in a prepared pan. Sprinkle more powder sugar over the top and let rest for at least 6 hours at room temperature.
